In the company of top art historian, author, former chef and resident of Castile, Gijs van Hensbergen, as well as regional expert and Iberian Wine Tours host Jeremy Shaw, you will be treated to a privileged insider’s introduction to this fascinating region. May and June is a wonderful time to enjoy the high altitude clarity of Old Castile, with its magnificent castles, mountains and squares and for savouring the red wines of Toro and the Sierra de Gredos as well as the whites of Rueda. Regional gastronomic specialities like suckling pig and lamb as well as some of the world’s best hams make this a food and wine lover’s heaven.


The love of wine and the stories surrounding it remains the driving factor behind our trips. We experience tastings of top class wines from established winemakers as well visits to what are considered the best new wineries in the region. On this trip we will visit many contrasting wineries to taste some stunning wines:

  • Ossian producers of some of Rueda's best verdejos
  • La Zorra produces quality wine in the Sierra de Salamanca using the Rufete grape (93 Peñin points)
  • Teso la Monja one of the top estates in the Toro region
  • Bernabeleva top producers of old vine Garnacha in the Sierra de Gredos


We always provide a selection of top class restaurants on our trips ranging from small and traditional to international standard award-winning venues. On this wine & food tour we will dine at the following locations:

  • Suckling lamb lunch at Alejandro Fernandez's Dehesa la Granja estate, near Toro
  • Michelin star dinner at Victor Gutiérrez, in Salamanca
  • Suckling pig lunch at José Maria, in Segovia
  • Tasting at top artisan cheese producer, Vicente Pastor
  • 2 Michelin star dinner at El Club Allard, in Madrid 
  • Iberico ham tasting at one of world's top producers, Simon Martin



We always stay in comfortable and stylish accommodation and on this wine & food tour we will be staying in the following hotels:

  • In Segovia, we stay at the lovely 4* Palacio San Facundo
  • In Salamanca, we stay at the historic 4* Palacio de Castellanos
